almond extract, what to do with it? Also, suggestions on tiny herb garden!

On the almond extract: So far I've used it once in a cake, and I liked it very much, but i was wondering what else could I do with it? I love almonds, and the smell of the extract it so nice, so I'm looking any recipes (especially desserts/cakes/cookies/muffins) that will help me use it up!

Almond extract: My mom makes these amazing Chinese almond cookies. Her recipe is basically this one, though she uses all shortening (which makes them white) http://chinesefood.about.com/od/dessertcookies/r/almondcookies.htm They're amazing.

Herbs: Rosemary and thyme! Fresh rosemary is an absolute revelation, and it smells nice as it grows. Thyme is very flexible and easy to grow in pots.

But you can substitute almond extract for the vanilla that's called for in ANY recipe, and it will turn out delicious.

My new favorite thing to do with almond extract I found when making some refrigerator oatmeal. Mango + almond = super tasty!!

I put Almond Oil in sugar cookies along with orange zest.

I have also put a bit in chocolate chip cookies with no ill effects.

Mint will absolutely take over everywhere so you have to be careful to confine it. Basil and parsley will need to be reseeded every year.

Personally, I use thyme a great deal.
