Searching for a pineapple and rum cocktail recipe...

And Google has not helped despite my certainty that I came across this recipe on the internet. Did you have to puree the pineapple after cooking it? If so, I think this is similar to what you're looking for:
3/4 cup sugar
1 cup water
1 sprig rosemary
1/4 pineapple, cut into 1" chunks
Bring water, sugar and pineapple to a boil and stir until sugar is dissolved. Reduce heat and simmer for -10 minutes or until pineapple is softened. Remove from heat; add rosemary and let steep until water is cool. Remove rosemary and process pineapple mixture in blender until smooth. Chill 1 hour.
To make cocktails, in a pitcher combine 2 cups rum with pineapple puree. Add 1-2 cups club soda and stir gently. Garnish with rosemary sprigs and pineapple chunks (optional).

The pineapple wasn't pureed--it was strained through cheesecloth so the resulting juice was fully liquid without any pulp--and the recipe was definitely for a cocktail because the rum wasn't optional. That aside though, I think these proportions are pretty close to what I remember. Thanks for the help!

It was! Sweet but not too sweet, and the note of rosemary was an interesting contrast. Very refreshing for a hot summer day (which is what it's starting to feel like here in NorCal). Best of luck in your experimentation!
