Hello everyone! I have some turkey meatballs that I am going to be making with Dinner and I don't want to do the same old spaghetti, meatball sandwiches, or Japaneses meatballs with them. I am open to any ideas and I'll be going to the store later so I can most likely pick up anything that I might need ( Read more... )

This is a very easy recipe for sopa de albóndigas (meatball soup.)
Usually the meatballs have rice in them, but if they are done already you can add the rice into the soup.

It is, if you like spicy food you can add some chili (dry or fresh, just for the taste) to the soup while cooking, and with hot corn tortillas is the best meal. Also is very flexible, you can use any meat you prefer and just adjust the spices/ vegetables to go with it.

That sounds good. I was just thinking about making this during the winter and changing a few things up so it is nice to hear that that works.

Another meatball soup recipe. This is more of a spring minestrone, and I've made it with both ground chicken and ground turkey and used kale/spinach interchangeably. This is actually one of my favorite meals to make, but I think it works best with both (a) smaller pasta, and (b) smaller meatballs.

Try making Swedish meatballs with the turkey ground meat. Add nutmeg to the mixture. You can google for recipes. i serve Swedish meatballs with gravy over egg-less noodles.

I would slice the meatballs in half and use them as a layer in a spinach and mushroom lasagna.

Allergic to eggs.... unless they're mixed in to something? That makes no sense. Allergies happen at a molecular level.

Anyway.

A friend of mine made turkey meatballs will cilantro and cumin mixed in, then cooked them in chicken stock and crushed pineapple. Served over rice with black beans and diced cooked peppers. Very good.

I can't eat anything with an egg glaze or scrambled/hard boiled/ect. eggs but I can eat them when they're baked or cooked into something. It's never made sense to me either but that's the way my allergy is.

That sounds pretty good. I will have to put that one my list of things to try.

Have you ever looked into whether it's the yolk, the white, or both? My father-in-law used to be allergic to the yolk, but not the white. If you can tolerate one or the other, that opens your options a bit.
Not that that helps you with your meat-ball question - well, meat-ball (white only) omelette? No, I think not :)

Put them in pitta bread with salad, like a kebab? In a tortilla wrap?

When I was younger my family did some testing (at the request of the doctor) on that and it is the whole thing (I can't even get a flu shot without get majorly sick). Our running theory is that since a cake normally has 1-2 eggs per cake that's why I can eat it as apposed to something that is most made up of eggs with a few other things like an omelet.

I've done the kebab thing and it was really good but it is getting a bit to chilly to grill where I live. Salad and pitta bread is another idea that I am going to have to try though.
