Big Ginger Cookies and Gingersnap Dip

This is one of my go to cookies for the holidays. And the dip is awesome!  We also use the dip to top pumpkin pie and it is so good you will never go back to plain Cool Whip again.

1 cup confectioners' sugar
2 teaspoons pumpkin pie spice
1 carton (8 ounces) frozen whipped topping, thawed

Sorry I am from australia and am not familiar with the following if the sugar castar sugar?
I have no Idea what pumkin pie spice is nor what frozen whipped topping could be either...
And I am guessing all purpose flour is self raising flour?

confectioner's sugar is also called, icing sugar or powdered sugar. It is pure white and has a touch of cornstarch in it. It is used to make frosting for icing a cake ( ... )

You won't be sorry. Great cookies and the dip is very versatile. I've used it as a filling in a cake, to make sandwich cookies, mixed it into ice cream and of course it is the best pumpkin pie topping I've ever had.
