I do this all the time with my cucumbers. I love the texture from the ribboned cucumbers but it gets soggy so fast that I usually wind up just chopping them into 1/2" cubes (I like to let them sit for an hour or two to absorb some of the marinade/dressing). If you want a little kick add in either a very thinly sliced chile or a sprinkle of red pepper flakes!
