interesting how? sweet potatoes are a fantastic start and would compliment things by having something a bit on the sweet side with the savory turkey and beans

Why not try some bread? Its really easy to make by hand, and all you have to do is look through your herbs to find interesting flavors that would add to the meal. I love adding sage to everything I make, and celery flakes add an interesting texture. I've also added nutmeg along with sage and they compliment each other surprisingly well. If you're interested I could give you a Base Recipe to play with.
No problem! I love making bread; its become one of my favorite things to do during the weekend. I use my grandpas base recipe and fiddle around with it until I come out with something good. It always puts me in such a great mood! XD
Mac and cheese works as a side with turkey instead of the more traditional mashed potatoes and gravy. Although variations of potato are great ... hasselback potatoes, scalloped potatoes or au gratin.
Mashed patatoes are the standard, and I do love them but you asked for something different.
I really like wild rice with chicken, though I usually use the wild rice "mixes" you can sometimes find, and I think it would be great with the dishes you have described. If you want something simple and fast- you could make couscous- mix in some toasted pine nuts and some of the turkey drippings to make it really nice!
