Twice Baked Cranberry & Pancetta Sweet Potatoes with Balsamic Glaze

These twice baked sweet taters are fancy enough for a holiday meal, but simple enough to make any night. You can even prepare them a day in advance so they're ready to pop in the oven before a big meal.
