I'm presuming you can get the cream of coconut at Asian markets? We have a Filipino neighborhood near us with several good-sized markets.

Yes. There are really two ways - buy it, or skim the cream from coconut milk. I do want to clarify - this is the non-sweetened stuff - not the coco lopez sweet stuff used in drinks. Some labels will say creme de coconut, some will say coconut cream. If you can't find it, you can buy canned coconut milk and refrigerate it, then use the solids from the can.

You can also use just coconut milk - it will taste very similar to the coconut cream, just will have a much thinner consistency. I wanted something a bit thicker so I could use it like dulce de leche.
