I've given up meat for Lent. This is a big deal for me - I trained as a chef and a butcher, so meat is like my thing. Dedicated carnivore over here.

If you absolutely CANNOT find it and still want to try this, you could sub in parsnip or sweet potato...
As for giving up meat, for me this is a big deal. I'm an Argentinean/Australian (dual citizen) expat in the UK, and the thing to realise about Argie cooking is that it's basically a cunningly disguised delivery mechanism for beef. Everything exists to showcase the meat. To us, a vegetarian is something you eat. All my comfort foods are pretty intensely meaty, all the things I remember from when I was a little girl in Buenos Aires. If I were vegetarian permanently - and I respect you for that choice - I wouldn't be able to share a meal with my family, because the focus on meat is such a big thing culturally ( ... )
