The idea of making a veggie burger with it sounds good.
I once attended a class, where we made cakes of quinoa - steamed quinoa dressed with lemon, olive oil, salt etc + raw egg mixed in. We packed it into individual cake pans and baked, it tasted beautiful. You might find this idea useful.
