I always love your recipes! Do you think these would freeze well? I am having a baby in the next few weeks and I'd like to freeze some treats for days when I don't feel up for baking :)
Aw thanks! I wasn't sure, but some googling makes me think you could freeze them. I do think that condensation would occur once they were thawed, but honestly, I wouldn't mind a little condensation here or there on my truffles... ;) http://chowhound.chow.com/topics/343002... )
I'm not a huge fan of ginger snaps, is the flavor very prominent from them? I actually have both ginger snaps and vanilla wafers (Sprouts brand)... do you think the vanilla wafers would work, or is it essential to have that ginger snap flavor?
The gingersnaps and graham crackers are the primary means of spicing the pumpkin in this recipe. If you don't love 'em, I'd double the graham crackers and supplement any other spices you'd like with your pumpkin (e.g. 1/2 tsp of nutmeg, maybe about 1/4 tsp allspice).
The nilla wafers would also work, but I think doubling the grahams is a better option for the flavor profile! On the other hand, now I kind of want some pumpkin nilla wafers... ;)
