Beer pulled pork

I tried a new beer yesterday, a smoky Octoberfest style, that tasted rather like black forest ham. It wasn't something I would drink (I'm not a beer drinker at all), but I thought that it would be great for making pulled pork in the slow cooker. The pork recipe sounds like it should work; I like the idea of the reduced sauce, although I think the horseradish might be better on the side. I'd probably use more onions to add a little extra body to the sauce, and, and slather the pork with mustard rather than mixing it in. You might consider using one of those coarse German sweet mustards instead of dijon, too- I think they go better with beer. Another possibility is to cook carrots and/or sweet potatoes in the pot with, do them as a separate side. maybe a little ginger too ( ... )

Thanks for the suggestions. I love sweet potatoes, so I might do something with them.

I already have a recipe for the brownies, it specifically calls for a coffee stout, and hte same local brewery that made the Smoktoberfest makes a Stir Stick Stout that will be perfect for it.

I've made pulled pork in a crock pot before, with beer. I added a carrot and onion, just for a little more body. From what I remember, there was quite a bit of liquid, since I covered the pork with it, so I don't know how long it would take you to reduce it, but that does sound like a great idea. You may want to add some salt and pepper. The only seasonings I used were the beer, salt, pepper, garlic, and some cumin, and it was great.

I'd add a sweet element, and something to round out the flavours, a sauce of just beer and mustard will be pretty sharp.

I've never had pulled pork do me wrong in the slow cooker, and I wind up with a different recipe every single time. Basically I do it the way you say, with onions and a bit of seasoning (either mustard, lime juice, a touch of ketchup, coriander, chile powder, any combination of the above). I don't usually add any extra liquid and wind up with 1/4-1/3" juice in my 6 quart pot at the end, so a bit of beer should lead to plenty for sauce.

For sides: I like something cool with my pulled pork, so I always lean toward slaw. Preferably shredded cabbage with green apples.
