Beer pulled pork

I tried a new beer yesterday, a smoky Octoberfest style, that tasted rather like black forest ham. It wasn't something I would drink (I'm not a beer drinker at all), but I thought that it would be great for making pulled pork in the slow cooker. My thought is to slice up an onion, put it on the bottom of the crock pot top with my pork, and them pour on the beer, mixed with some dijon mustard. I was then thinking I would cook down the liquid once the pork is cooked, and add some more mustard, possibly a horseradish dijon, to make a sauce.

I'm also going to make fudgey brownies with a coffee stout, since this will all be for a beer tasting party. My question is, I've never improvised a recipe like this, so if anyone has any suggestions, I'd gladly take them. I'm also looking for ideas for sides to go with the pork.
