Maple syrup recipes!

I was recently gifted with three bottles of maple syrup, one dark, one medium, and one light. The light is earmarked for french toast, pancakes and such, but since I only eat those things so often and the dark especially is better suited to cooking, I'd like some great recipes to try. Mix dark maple syrup and good brown mustard to taste, plus a bit of olive oil to smooth it out. Delicious with chicken, turkey or pork.

Not necessarily a recipe, but I love to mix maple syrup with some dijon mustard and pepper, and maybe a few other spices if I'm in the mood, and glaze pork roast or pork chops with it.

Also, something incredibly simple that I love is I like to pour just a bit of maple syrup over plain yogurt. It's mild enough that I still get the tangy yogurt, and isn't too sweet.

If you are interested in sweet recipes, it's great in cheesecake, and I have a to die for gingerbread loaf recipe that uses maple syrup if you want.

I find maple syrup on plain yogurt tastes almost like vanilla. I love doing that as well.

Savory
Glaze a ham with the dark syrup and some hot mustard powder.
Add it to your favorite BBQ sauce recipe.
maple soysauce glaze for salmon (use only a tiny amount...)

Sweet
drizzle it over vanilla ice cream
make gingersnaps with maple instead of molasses.
Oatmeal. Put it on oatmeal. Or in oatmeal cookies. MMM maple oatmeal cookies with dried apple bits instead of raisins.
