Potstickers are a great idea. I keep coming across these great Hawaiian sweet potato recipes and though about using them a filling for dumplings/won tons.
These links should help- because so many traditional Hawaiian vegetable dishes tend to be sweet, I highly recommend looking at the Micronesian red rice recipe too, also pancit, lumpia/eggrolls, steamed dumplings other than char siu, and of course, sushi rolls. It's pretty tasty- Chamorro foods have a lot of the same ingredients and influences as Hawaii, but they don't care much for sweets, prefer spicy, so there are some pretty good vegetarian recipes in that file. And just fyi, achiote aka annato, the fresher the better, and if you're in AZ, you might even be able to find a tree..
