Nougat Question

Now that the daring baker challenge is over for this month, I have a question. Have any of you made nougat? I tried this recipe from Emeril, and it didn't do so well. I know I made a mistake and added the butter way too early, but does it really call for 2 sticks of butter? I was able to pull it together after allowing it to refrigerate for a bit, ( Read more... )

That sounds like an extraordinary amount of butter, way way too much for something like nougat (I didn't even know any nougats had butter in them, it does seem like an ingredient sometimes used, but in much much much smaller quantities). I'd guess it's actually a typo. There's a big list of nougat recipes here: http://candy.about.com/od/nougatcandyrecipes/a/nougat_hub.htm and I've found about.com to have at least decent tutorials for starting out with something like this.
