-cajun dirty rice -southern fried livers -cut it with ground turkey to make a liver loaf -a basic dredge in flour, to be seared and finished in Red Wine may work (though I've only done this with beef liver before) -I recently found a risotto recipe that is to die for! http://www.cookitsimply.com/recipe-0010-0w5945.html

but i would make a pate- and eat it on a toast with some red onion jam.
or- if im lazy, cook it in good seasoned stock. and grind it in a food processor with some eggs, fried onions, mayo, salt and pepper.
