Need recipes for fresh trout

My husband has been fishing quite a bit recently and now I'm up to my elbows in trout.  (I think there might be a little bit of redfish and catfish in there, too.)  What are your favorite ways to cook fresh fish ( Read more... )

I don't have a favorite recipe or method for frying fish. We usually go with a mix (corn flour, corn meal, paprika, S&P) we pick up at the local fishery and soak our catfish in milk for a good hour or more(gets ride of that muddy flavor). However, I did catch this episode of Good Eats the other day with three different recipes for trout - smoked, pickled, and marinated. I like my fresh fish pan fried in lemon butter with lots of fresh parsley and tarragon.

i do the whole fish in foil packets in the oven with lots of lemon and fresh dill and it's amazing! i cut the head and tail off, put lemon wedges and sprigs of the herb in the cavity and around the fish and drizzle with a tiny bit of olive oil. then bake at around 180-190c for 20 mins or until the fish is done. also good with thyme instead of dill.
