Need recipes for fresh trout

My husband has been fishing quite a bit recently and now I'm up to my elbows in trout.  (I think there might be a little bit of redfish and catfish in there, too.)  What are your favorite ways to cook fresh fish?

I'm especially looking for your favorite recipes and methods of frying fish (I'm hoping to host a fish fry soon), but I'll take any other recipes that you're willing to share.
