so for a quick dinner I used trader joes green curry simmer sauce with some chicken, bell pepper and carrot. for a weekday meal, I LOVE these things
but what to serve with it?
I remember a fave restaurant does a coconut rice and I wondered if it could be done with quinoa
well it can
I used one can of lite coconut milk (2 cups) plus one cup of water to 1.5 cups of quinoa and let it simmer until absorbed
and it was delicious! a light coconut flavor and it could go both savory or sweet (add some dried fruit and toasted nuts for a great breakfast)
the only thing I would do next time is to use all coconut milk rather than thin it out
I can't wait to do this again
