My husband has been fishing quite a bit recently and now I'm up to my elbows in trout. (I think there might be a little bit of redfish and catfish in there, too.) What are your favorite ways to cook fresh fish

I don't like fried fish all that much but what I can totally recommend is this fish pie recipe from Jamie Oliver - soooooo yummy!
Another thing I do make from time to time is just pasting some green pesto on top of the fish filets and popping them into the oven - it turns into a nice crust and the fish picks up a lot of flavor from the pesto :)
Honestly, fresh trout? SO jealous! it makes me a little sad to think of it fried.
My favorite way to prepare trout is pan seared. Basically something like this, except I like to take flour and mix with the salt and pepper and very lightly dredge it before it hits the pan.
Sometimes I just finish the pan sauce with butter, lemon, and a dash of wine, or sometimes add a little cream to it. So good.
I never fry foods. My grandmother bought me a deep fryer three years ago and I've used it twice, both times for french fries. It's super unhealthy and leaves my house smelling like fried foods for a week. (Same with bacon, actually. I refuse to cook that too.) But the guys are going fishing this weekend and want to have a fish fry on Sunday, so I need to learn how to cook it before then.
Also, these are sand trout, so unless you can catch some really large fish, they tend to be smaller pieces of meat. You can't really make fish steaks with them.
Minus the veggies, that sounds similar to my fallback recipe for redfish. (Either that, or a hint of homemade Cajun seasoning.) I usually don't bother with a pan sauce, but I'll have to try it. Thank you!
If you have a deep fryer and an outlet on your back porch/deck you can use it out there. It will avoid the "house smelling" problem at least. I have a deep fryer too and can't remember the last time I used it -- I think it's been at least five years. But it enables me to fry outside and avoid the stink!
Also, bacon you can cook on a sheet pan in your oven. It still smells up the house but not as bad as pan frying it.
You know, I've never tried trout almondine. I don't think I could cook with the whole fish, but I'm certain I could modify the recipe for fillets. Thank you!
I love catfish. In case you have any of that... dip it in milk, then in a mixture of flour with salt, pepper and paprika. Pan fry in vegetable oil. I guess you could make any fish this way. It's easy and delicious.
