Grilled Potatoes

I stopped to pick up some fish on my way home from work. I had intentions of grilling mahi mahi and making roasted potatoes for dinner. Well, I wasn't paying attention and I ended up with too small of a piece. Thankfully, my husband had another plan for dinner!

My easy fall-back is "Italian seasoning" but my daughter prefers cumin, paprika, chili powder and turmeric in addition to salt and pepper.

When I do potato packets (chopped up potatoes wrapped in foil then grilled), I sprinkle the potatoes with olive oil, salt, and pepper, then other herbs or seasonings depending on what I'm pairing it with. For example, if I'm having steak, I might do them kind of italian, with garlic powder, basil, and parmesan.

Re: the fish ... I'd cook it tomorrow or the next day at the latest. It's unlikely that your fridge is at the relatively constant cold temperature it was kept at in the market where you bought it especially with the door to your refrigerator being opened at a regular rate for home use. You'd have to keep it "on ice ( ... )

Olive oil, garlic and rosemary. Even better when using the small red potatoes!

Agreed! actually, any fresh herbs you like will be a nice addition- you might also try drizzling the potatoes with a viniagrette rather than olive oil.
And the fish absolutely won't last 3 days unless you freeze it!

With that combo? I've made something similar in the oven using beer. You could probably do the same on the grill.
