What about a scalloped potatoes and ham? I just make a white sauce. Then just layer white sauce, thinly sliced potatoes, ham, leeks or other veggies, white sauce, etc... just make sure you end with sauce. You can also add cheese in the layers if you want. Bake at 350 until the potatoes are done.
A Quiche would be good using any or all of those. The ham would be good in fried rice, too! You might make something like German potato salad, or twice baked potatoes...
some cut up ham, to your tastes. I usually do about 1 cup. 1 half package frozen shredded hashbrowns - you can scale this as much as you want - feel free to thrown in the whole bag if you prefer 1 can cream of potato soup Salt Pepper Assorted seasonings - I like some garlic and onion powder
Stir it all together and bake for about 25 minutes at 325 in a lightly greased pan (9x9 for a half bag of hashbrowns, 9x13 for a full bag) until it's brown and crispy. Sprinkle some cheddar cheese and paprika on top, bake it a few more til melty. NOM!
This also keeps beautifully, tastes even better the next day, and there's no reason you couldn't toss in a handful of leeks.
