Suggestions on what to make for a picnic?

 Since tomorrow is looking like a nice, sunny day, the boyfriend and I were thinking of taking a short road trip and perhaps bringing a picnic lunch. The only thing we've really decided on bringing though are chocolate chip cookies. I have a small loaf of bread in the freezer that I made a while back, so I think I'll defrost that, pop it in the ( Read more... )

What about chicken salad sammies?

My favorite chicken salad recipe uses no mayo, so it's really good for traveling, as it won't spoil

2/3 c rice wine vinegar (or apple cider vinegar)
1 tbs dijon mustard
tbspn fresh dill (optional, but YUM if you have it)
salt and pepper to taste
1/3 tsp honey
celery, diced
optional: sliced grapes and walnuts

Whisk the vinegar and the mustard, add dill, salt and pepper
add grapes and nuts
mix in chicken
enjoy!

Chicken salad, cheese and crackers, and roast veggies are my fav's for picnic's.

With leftover roasted chicken I just like it in chunks with lettuce, a little mayo, salt, and pepper in a sandwich.

Its simple and plain, but tasty.

Soup is kinda hard to manage on a picnic. Why not take chunks of chicken, bread, cheese, maybe some grapes or other fruit; finger food.
