I've never tried anything like this before, but it sounds like that's going to end up being a whole lot of meat per person. Are your guests going to be coupled? I might serve those one per couple. Personally, I'd probably go with mashed potatoes and brussels sprouts or creamed spinach as sides, but those are just go-to sides for me.

I'm working on the theory that one normally serves one partridge to one person, and the stuffing won't add much more meat: also, since the eaters don't have to mess around trying to get it off the bones, they'll probably eat more. You may well be right, though.

The only multi-bird roast I've ever had was a turducken, and it made a LOT more meat than just a turkey. I mean, I know you're not working with whole birds, but stuffing 3 different kinds of breast meat into the cavity of a partridge will probably increase the meat content pretty significantly. At least, I would think it would, but it sounds like you'd know better than me. Just a thought!
