I'm looking for easy to make, budget friendly dinners that also double as amazing leftovers for lunch. Nothing too heavily spiced as my dad doesn't like that, but other than that, I'm totally open.

My favorite, easiest, go-to recipe - creamy crockpot chicken (from a friend of mine).
4-5 boneless/skinless chicken breasts 1 block of cream cheese (I use the 1/3 fat, fat free in this is GROSS) 1 can cream of (whatever) soup (I like to use cream of chicken, friend uses cream of broccoli) Italian seasonings
Dump everything in, put on low for at least 6 hours (mine is usually on for about 9 since I start it before work), mix up when you get home! The chicken will fall apart - I usually shred it with a fork just to get the giant chunks out.
I like to serve this with jasmine rice, but it's good over egg noodles, too.
1. Place shallot, ginger, garlic, rice, chicken broth, and sesame oil in rice cooker and stir. 2. Place chicken thighs on top. 3. Close lid and cook on regular rice setting.
Super easy and yummy, and it makes great leftovers as is (I usually shred whatever chicken is left into the rice) or reincarnated as fried rice!
Mmm, not too spendy - you should be able to get a decent one in the $30-40 range (we got ours on a really good deal during the Amazon Friday Sale, which is always worth a look when you're in the market for appliances). I'm sure the recipe would work just fine in a slow cooker, too!
Ooooh. How long do you think it would need to be cooked in the slow cooker? I may have to go with that for now because we're a bit tight on cash right now.
