I feel like a jerk for not including those very pertinent details!!! There are 2 of us and we're in Texas, it's supposed to be in the low 60's and possibly rainy :)

The marinated veggies sound delicious!

I like pizza. You can make the bread beforehand (or not), and add tomato sauce, cheese, and whatever toppings you want. My Girl Scouts loved it, especially the making the bread part. Well, and eating.

How about a dump cake? Throw in a can of pineapple, a box of white cake mix, 1 or two sticks of butter, and 1/2 cup brown sugar into a dutch oven. Don't stir. Put near/in fire, and put a few charcoal brickettes on top. Cook until done (Check as needed.)

Roast vegetables in foil packets works really well.

I think it depends on if you want quick and easy or if you don't care about cooking and trying to wash dishes. I went camping about a month ago, two weekends in a row and one weekend I cooked and the following weekend I made it easy on myself ( ... )

The number of eaters and temperatures sounded exactly like the first big camping trip of the season we did during Memorial Day weekend, on a trip from Anchorage to McCarthy, Alaska. It was my second time with the itinerary, and my partner's first.

I decided to experiment with the menu, and everything turned out beautifully.

First of all, good-quality Ziploc-style bags are your friend.Think outside the box: if you want scrambled eggs or omlettes, why pack the whole egg? I whisked four eggs with seasonings before we left, and they were great after one day in the cooler, fried up in a simple camp skillet with a touch of butter ( ... )
