I found one bigger! A couple years ago on a rafting/camping trip we found a zucchini about 4 inches wider than that one in the river. We figure someone was growing it in their backyard for a fair and it fell off/animals helped it roll in to the river. We ended up slicing it in to strips, drizzling oil over it and Mrs. Dash-ed it and roasted it over the fire. It was some of the best food I've ever had. Something along those lines would be my suggestion :)

Sometimes the big ones tend to be on the more bitter side. My similarly-sized one ended up as three loaves of zucchini bread.

I agreee. I usually only use zucchini this big for bread. Speaking of which...I still have some shredded zucchini in the freezer. I should make a loaf of bread!

The big ones (while impressive) aren't as tender or tasty as the little ones, imo. As mentioned, they can get bitter, and the flesh can get a little fibrous and weird. I would look for ways to use up a lot of zucchini rather than trying to highlight it.

I just bought zucchini just to make this cake.

Those giants (guilty as charged. often.) make awesome stuffed zucchini - we use rice, hamburger, some tomato paste or sauce, spices, some green chilis and cheese! I cheat and precook everything fairly well, then put it in the uncooked zucchini, top with cheese, and bake 'til cooked through and the cheese is golden - usually takes 15 minutes or so, don't remember what the oven temp is.

This is exactly how I do it too, except I prefer to use lamb. It's so delicious this way!

I just get it from the butcher. It's generally less expensive and more available than at a regular grocery store. Or I buy it at the local Middle Eastern market.
