perking up leftover penne marinara

I had a large catered party this weekend, and ended up with a huge tray of penne with tomato sauce mixed in. It's pretty good (though not spectacular), but it's going to take my husband and me a loooong time to get through it. We'll freeze some, and we've already given some of it away to friends, but I wondered what ideas you guys had to make loads ( Read more... )

Mix in chili and top with cheese, mix in a big pile of roasted veggies, layer with ricotta or cottage cheese and mozzarella and bake like lasagna. :)

I'd been thinking that fresh veggies wouldn't change the basic flavor much, but roasted... everything's better roasted!

Use it for soup. Tomato broth and some chopped up sausage. Yummy!

Mix in some crushed red pepper and spicy sausage.

Mix in veggies.

Mix in alfredo sauce to get a creamy fake bolognase dish.

And that's all I've got without sounding completely redundant.

I would sautee some onions in a little olive oil and add a ton of crushed red pepper flakes. mix in with the penne and marinara and top with goat cheese!
maybe even add in some cooked chicken...
