Orange roasted chicken help

Yesterday I made a pantry staple- whole chicken, 'roasted' in the crock pot with potatoes, carrots, onion and celery 'til it's done. This time I'd wanted to do something a bit differently so I stuffed the cavity with a quarter of an onion and half of a whole orange (in large pieces) and squeezed another orange's juice out to use as the liquid ( Read more... )

I wonder if reducing the orange juice with some honey and adding some butter to the glaze before brushing it on the chicken would help. Adding the zest to the glaze at the last minute sounds like a good idea as well.
