mmm kangaroo. I've only had it on skewers dipped in a saucy thing. Yum. Sammiches sound good though. What about kebabs (sorta sammichy but with yogurt sauce and hummus and such?) A stew sounds good. Have no experience cooking it though, besides on Australia day where our recipe included pouring the beer we were drinking on it while on the bbq because we were too drunk to get more creative. Ahhh I miss Australia
I'm known for putting any kind of meat (chicken, beef, etc.) over buttered pasta, like spaghetti. It might work for kangaroo, but since I'm American, I've never had kangaroo.
Roo is GOOD! You should try it. :) They're friendly to the Australian environment and hardly in danger of extinction. If I had my way I'd get Australia to get rid of all it's damaging sheep and cattle and farm roos, crocodiles and emus for leather, meat, fur, feathers and oil. Well, crocs and emus are farmed to a very small extent, but large scale fencing for roos is a problem.
And the meat? Sweet and low fat. Just don't overcook it. Roo is best served rare/medium rare. Some people prefer it blue (just singed on both sides), but that's a tad too raw for my liking.
Oh, I'm sure it's awesome. Being born and raised in Northern California right across the bay from San Francisco I've been exposed to some of the best gourmet food *ever* & had almost everything under the sun, but when it comes to eating hoppy cute things that I associate with childhood story books (lambs, duck, kangaroo) I always get a little choked up and have to decline.

That musta been one big roast. We get the little herb and garlic roasts from Coles. Sooooo yummy.
