mmm...those sound tastey and familar. down here(i live in ga. but the recipe comes from my parents who are from NC) we have these things called salmon croquetes. That sound a lot like that...but I never thought about extra spice like w. sauce or hot sauce... We just used Herbed salt and minced onion. *sighs* when I was back home we used to eat them for dinner with botan rice. and the leftovers for breakfast with grits and salmon gravy.
