All this talk of salmon inspired me to make yummy salmon cakes.
I would recommend chopping up celery and throwing it in there too. I left out the salt and the Worcestershire sauce but think the hot sauce added a really nice touch.
Served over rice and black beans with an impromptu roasted red pepper sauce.
SALMON CAKES
1 can salmon
1/4 c. butter, melted (I used soy garden)
1/2 tsp. pepper
1 tsp. salt
2 eggs
1/2 c. bread crumbs
2 tbsp. flour
1 tsp. Worcestershire sauce
Dash hot sauce
Mix all ingredients. Make into cakes and fry at 375 degrees until brown on both sides.
