This is a simple, but delicious and quick way that I prepare salmon when I'm planning a light dinner or if I'm making it for lunch the next day.

Basically, broil your salmon in a pan lined with foil that has been brushed with olive oil or pan sprayed. Squeeze a few lemon slices over the raw fish and then rub with dill. Lay a few lemon slices on top of the fish and then broil until fish is flaky and cooked through.

Serve over a bed of rice and mixed stir fry veggies. I use frozen because of the time factor. Add lemon juice and soy to taste.
