salt and pepper tofu

I've got the perfect type of tofu to make salt and pepper tofu - firm but soft, and want to make it for dinner tonight. Does anyone have a good recipe for salt and pepper tofu? I love the type they serve at my favourite Chinese restaurant...it's crisp and light and crunchy on the outside and really meltingly soft on the inside, almost like custard ( Read more... )

To get tofu to be like that texture wise, you have to BUY fried tofu (that's plain) and then season it. But as far as I know you cannot get regular tofu and make it like that texture wise at home. If there are asian markets near you, that's the best place to look for fried tofu.

thanks anyway, but i don't mean the deep-fried tofu with the puffy texture, the salt and pepper tofu i've had has had a very different texture. it's cool though, i just tried to imitate what they serve at the Chinese restaurants i've been to by coating some soft tofu in seasoned cornflour and shallowfrying it and turned out pretty yummy.

I have the best results when the tofu gets pan-fried in 1/4-1/2 inch oil that is VERY VERY HOT. The hot oil will give the outside a nice crispiness.

Too funny - I am just reading Alton Brown's I'm Just Here For The Food, and he uses a recipe similar to what you are describing to illustrate the concept of searing foods. Like the above poster wrote - HOT HOT HOT pan with a coating of oil, tofu covered with salt and pepper.
