I've got the perfect type of tofu to make salt and pepper tofu - firm but soft, and want to make it for dinner tonight. Does anyone have a good recipe for salt and pepper tofu? I love the type they serve at my favourite Chinese restaurant...it's crisp and light and crunchy on the outside and really meltingly soft on the inside, almost like custard or something! I have crispy-fried shallots and garlic to sprinkle on top, along with fresh shallots and sliced chili....mmmmm.
