adventures in tofu

I have a confession to make. I, the self-proclaimed healthy food adventurer, had never tried cooking with tofu. I've had tofu-burgers that came pre-packaged. I've worked with meat substitute crumbles many a time. I've eaten tofu in soups. But I've never tried to cook with it on my own.

I LOVE Ma Po Tofu, but I've never attempted to prepare it. I have a favorite Chinese restaurant that makes a really good version of it.

tofu, the way i've eaten it for the past 20+ years...

1 cube soft tofu steamed/chilled.
Garlic/Shallot and some small dried shrimp for flavour, fried to just golden crisp in a lot of healthy oil (needed to bathe tofu in)
Soya sauce
Chopped spring onion for garnishing
A dash of sesame oil

Lay tofu on a large plate or pasta dish (something to contain the liquids coming). Empty the hot oil & garlic shrimp mix over the tofu. Preferably this oil mixture is hot off the wok/saucepan. Follow with a stream of soya sauce. Oil and soya sauce wont mix but that's the point, to create a smooth tofu with the taste of dried shrimp and soya sauce in btwn. You can use the oil, soya sauce, garlic shrimp mixture as a sauce over hot steaming rice.

Oh and garnish with spring onion.
