Medium rare salmon anyone?

I just have a question. Who eats salmon medium rare? People eat salmon medium rare???? This recipe looks delicious....but well done and flaky.

I eat salmon and tuno medium rare regularly. Just make sure it's fresh and you're good to go. No different than sushi.

Wait. Now I feel stupid..... Why didn't I think about sushi?

It just seemed weird to have a normal piece of salmon "cooked" like that. I love raw sushi. haha Jeez. I blame the cold medicine.

S'okay. When I was growing up, rare fish was practically unheard of. I think with the rise of sushi, the last few years have ushered in an acceptance of raw fish.

The center of the fish is medium rare. Those pale pink edges - THAT is what well-done salmon looks like.

if you like raw salmon, you might wish to try salmon cheviche recipes. Cheviche is a method of "cooking" food using acids such as citrus juice, if you're not familiar with the term. Salmon is amazing done in this style.

Tuna and salmon seared on the outside and raw in the middle is absolutely divine, esp. with thickened teriyaki sauce on top.
