Medium rare salmon anyone?

I just have a question. Who eats salmon medium rare? People eat salmon medium rare???? This recipe looks delicious....but well done and flaky.

I eat salmon and tuno medium rare regularly. Just make sure it's fresh and you're good to go. No different than sushi.

Wait. Now I feel stupid..... Why didn't I think about sushi?

It just seemed weird to have a normal piece of salmon "cooked" like that. I love raw sushi. haha Jeez. I blame the cold medicine.

S'okay. When I was growing up, rare fish was practically unheard of. I think with the rise of sushi, the last few years have ushered in an acceptance of raw fish.

I know why... Because sushi (or sashimi) grade fish and the fish you get at the grocery store are two different things. It is ok to eat sashimi grade fish raw. The reason for this is because they freeze sashimi grade meat at a lower-than-your-freezer-can-do-it temperature to kill the bacteria.

Freezing is often used to kill parasites. According to European Union regulations,[4] freezing fish at −20°C (−4°F) for 24 hours kills parasites. The U.S. Food and Drug Administration (FDA) recommends freezing at −35°C (−31°F) for 15 hours, or at −20°C (−4°F) for 7 days.
