Easiest Ever Brococoli Cheese Soup

Nov 04, 2007 19:50

Can't get any easier than this.

32 oz. chicken broth (this is one large carton)
1 cup water
1 cup heavy cream
Small pkg. Kraft Cheddar Singles (not American singles, I think there are six unwrapped slices per pack)
1/2 cup all purpose flour
16 oz. frozen chopped broccoli
Pepper to season

Garnish: Shredded cheddar cheese

In medium stock pot, combine chicken broth, water, cream, flour and pepper. Whisk to combine and break up any lumps of flour. Drop in cheese slices. Increase heat to medium high. Bring soup to a boil, whisking occasionally, then add broccoli. Reduce heat to low, continuing to whisk. Simmer for ten to twenty minutes. Garnish, if desired.
