Recipe: Herbed Oven Fries

Serves: 2


2 good-sized baking potatoes
2 Tbsp. olive oil
salt & pepper
garlic powder
mixed Italian herb seasoning (see note)

Heat oven to 450 degrees. Scrub potatoes and cut into chunky batons: cut in half lengthwise, then each half into four long strips, then each strip in half. Place on large baking sheet with sides, spreading out to make a single layer. Drizzle olive oil over and sprinkle generously with salt, pepper, garlic, and mixed herbs. Toss with hands to coat evenly. Bake about 40-50 minutes, until nicely browned and tender inside, using a spatula to stir and flip about every 10-15 minutes so that they cook evenly.

Notes:
The herbs can be varied at will. If you don't keep an Italian blend on hand, a combination of oregano, basil, marjoram, thyme, and rosemary will approximate it; but other herbs are also delicious. Use what you like and have around!
