Recipe: Saag (Greens with Garlic and Raisins)

Serves: 2-4
2 Tbsp. vegetable oil
1/2 c. golden raisins
1 small to medium red onion, cut in half and thinly sliced
5 cloves garlic, coarsely chopped
1 bag (12 oz.) washed fresh spinach
1 tsp. garam masala
1/2 tsp. salt
Heat oil in wok or deep 12" skillet over med-high heat. Add raisins; stir-fry about 1 minute or until raisins plum up.
Add onion and garlic; stir-fry 2-3 minutes until onion is golden brown
Mix in spinach. Toss 2-3 minutes, until wilted. Stir in garam masala and salt. Cook 1 minute more and serve.
Notes:
This is a nice, easy, Indian-flavored side dish. You can use other greens (kale, mustard, collard) if you like, though some of them will take a bit more cooking than spinach.
