I rarely post recipes, but this one is great to take to potlucks and the like over the holidays. Make up the filling beforehand and then bake it at the party.
(I stole it from a special edition of
Canadian Living magazine featuring the Toronto Blue Jays, back when I used to follow baseball. Later it occurred to me that the included recipes looked pretty good. This one was contributed by Kristen Babb-Sprague, the Olympic gold medalist who's married to former Jays catcher Ed Sprague.)
1 large loaf of French or sourdough bread. (The recipe calls for a round loaf, I find the long oval ones end up easier to cut into snack-sized pieces at a party.)
125 mL (1/2 cup) butter, softened
1.25 L (5 cups) thinly sliced mushrooms
500 mL (2 cups) shredded mozzarella cheese
8 green onions, finely chopped
3 cloves garlic, pressed (I use minced garlic from a jar and just add... lots)
Slice loaf in half, horizontally. Pull out enough of the soft insides to form two "bread bowls."
Beat butter until smooth; stir in mushrooms. Mix in cheese, onions, garlic. Spread on both sides of bread (actually, it's more like "heap on both sides of bread"--that's why you need to create the bread bowl effect.)
Bake for 10-15 minutes in 200 C (400 F) degree oven, until bread is crisp and cheese has melted. Cut into pieces and serve. (You may want to wait a minute or so for the cheese to set.)
