Pumpkin-Curry Soup

(I need to get a blender.)

One of my colleagues brought this to our party last night and shared the recipe (posted in her words.) Yum!!

1 can smashed pumpkin

1 can coconut milk

As much garlic and curry powder as you can stand (2 teaspoons of each oughta do it)

2 small or 1 large onion

Olive oil

Chop and sauté onion and garlic in olive oil for a couple of minutes. Dump in the curry powder. Swish around with a spoon for a few to cook some more. Dump in the coconut milk & pumpkin. Add some water or vegetable broth if it’s too thick. Plunk the whole mess in a blender and beat the hell out of it til it’s smooth.

I repeat: Yum!!
