Dinner for two

So many meals in the freezer that were intended for two. Ros and me... However, I need to try and get the freezer close to empty so that I can defrost it. Meal by meal... Two superb North Atlantic Cod Loins. OK. Pan fried in quality olive oil. One for me and one for Riley! I served mine with Peri Peri rice and a sprinkling of salt and black pepper
