Snack Bars

I'm really tired of spending tons of money on expensive gluten free snack bars that usually aren't very good. So today I played around and made some snack bars and they turned out really great. You can easily adjust these to suit whatever your tastes are, just use whatever GF cereal you like and whatever nut butter you prefer. Wrap them in waxed ( Read more... )

i made the pb-jelly ones and they were a disaster! i think my corn syrup (which i bought at whole foods and was "organic" and thicker than molasses - i had to use a spoon to dig it out of the jar) might have been to blame.. i couldn't mix the wet stuff with the dry stuff well enough to get a good consistency and the entire thing stuck to the pan after being refrigerated, rendering it completely uncuttable and therefore... not able to take them on-the-go! HOWEVER, i can pick little pieces of it from the pan and eat it and the concoction is, indeed, absolutely delicious. so thanks! maybe next time i will use thinner corn syrup and more of it.

I'd say the corn syrup was to blame. Sorry that you didn't have much luck but better luck next time!
