Snack Bars

I'm really tired of spending tons of money on expensive gluten free snack bars that usually aren't very good. So today I played around and made some snack bars and they turned out really great. You can easily adjust these to suit whatever your tastes are, just use whatever GF cereal you like and whatever nut butter you prefer. Wrap them in waxed paper and toss them in the freezer so you can pull out however many you need for lunches or snacks. I'm quite aware that these aren't the healthiest snacks in the world, but it's nice to have something sweet for a treat once in a while!



Peanut Butter & Jelly Snack Bars

4 cups of GF puffed corn cereal (I used EnviroKidz Organic Peanut Butter Panda Puffs Cereal)
1 cup chopped peanuts
1 cup chocolate chips
1 1/2 cups dried cranberries
1 cup peanut butter
3/4 cup corn syrup

Mix together the dry ingrediants in a bowl. In a small saucepan, heat the PB and the corn syrup over medium low heat until smooth and hot. Combine with dry ingrediants and press into a greased 9X13 pan. Chill in fridge for a half hour, then cut into bars. The combined flavours of the peanuts and the fruit made this taste like peanut butter and jelly. Yum!



Chocolate Butterscotch Nut Bars

4 cups of GF puffed rice cereal (I used Envirokidz Organic Koala Crisp Cereal)
1 cup butterscotch chips
1/2 cup chopped cashews
1 cup nutella spread
1/2 cup corn syrup
1/4 cup honey

Mix together the dry ingrediants in a bowl. In a small saucepan, heat the nutella, corn syrup and honey over medium low heat until smooth and hot. Combine with dry ingrediants and press into a greased 9X13 pan. Chill in fridge for a half hour, then cut into bars. These ones are quite sweet, if you prefer omit the honey and use an extra 1/4 cup of corn syrup.

Let me know if you try them and what you think! I think the next one I try will be with dried apples and apple pie spices! Any other ideas for good variations?
