Yum! I don't know where I would get sablefish here on the prairies, but I do have some spinach I need to use, and that recipe looks killer. I will have to give that a try!
It works really well with tuna and salmon, too, and it would probably work on any kind of cod. You may not want to marinate it as long, as those fish are not as oily as sablefish/black cod.
I would eat fish way more if I could afford it. This is a great recipe that would work with almost any fish. We've used something similar on salmon,tuna and halibut, but I don't know much about what you have readily available in New Orleans.
Seafood is extremely cheap here so I need to learn how to fix it already. I think I'll try this recipe with a redfish or a snapper and let you know how it turns out.
Sablefish is just black cod, garlic scapes are the tops of garlic and they are the texture of green beans, but taste garlicky! Arugula is a lettuce that tastes peppery and gorgeous. Sounds like I need to bring some Farmer's Market scores to your house! I'll be going next week, so let me know, ok?
