Well, I found out what "burning the milk" is. Apparently if you heat milk to a high enough temperature (by putting it into near-boiling water, for example), some of the proteins break down and turn into something else. Which is exactly the same process used to make UHT. Which is tasteless and horrible. I guess that makes sense. Since I mostly make ( Read more... )

So, I was watching this program about the history of chemistry, and the narrator makes a comment that "Until very recently, people didn't know that oxygen was needed for fire, or even that oxygen existed". Which is of course obvious once it's been pointed out, but had never really occurred to me as a thing to think about.

Today it is warm! I put laundry outside to dry, and went to the supermarket. It was too warm for snuggle-coat and silly-hat, and so today marks the return (hopefully for the rest of the summer) of the bucket hat! Yay ( Read more... )
