Brewing and fermenting do not use metal...I don't remember why, but it reacts with the metal.
The best "make your own rig" I've found involves a half gallon jar with the veggies held under the water line with a large zip-lock bag full of water, so that the water comes up to the rim of the jar, with the bag and veggies underneath.
I made some kimchi that was full of fail for the same reason....stick to glass and plastic =)
the important thing is non-metallic crocks. The acid in fermentation and pickling reacts with any metal though I have heard copper is ok I still dont trust it.
~the Harsch pots are great. I love mine. they are a little expensive but I think they are well worth the price. I really want to pick up a couple of more.
Yeah, terrible, no good, very bad and all that, but so funny I nearly spit on my computer screen. At least you can take comfort in knowing that your pain is giving me GREAT amusement. ;-)
